Kid-friendly dinner idea...

When Shane's out of town, I tend to use that as a free card and make really simple meals for me and the kids. Chicken nuggets, mac n' cheese, or breakfast type foods are usually on the menu for dinner each evening. The kids don't mind at all and I enjoy a break from the norm.

Of course, pizza is always a BIG hit too. My kids especially LOVE to make it from scratch. I ran across a fun pizza recipe the other day that I thought the kids would enjoy. So tonight, since Shane was on the road traveling, the kids and I made homemade pizzas, BUT with a little twist!

~Twirly Whirly Pizza Roll Ups~

Ingredients:
1 Tube (13.8 oz) Refrigerated pizza dough
1/2 cup Pizza sauce
1/2 cup Shredded Italian-mix cheese, divided
Meat of your choice

1. Heat oven to 400 degrees F.
Unroll dough from tube and spread pizza sauce on top.

2. Sprinkle with half of the cheese.

3. Add meat or other toppings (if desired).

4. Roll up, starting with short end.

5. Cut into 8 pieces, then lay pieces flat in a greased pie tin. Sprinkle with remaining cheese and bake 22 to 25 minutes or until golden brown.

ENJOY!

That is a great idea! My son is so picky!! But he loves cinnamon rolls and since those look sort of like that I wonder if he'd eat them. Also he could help make them so that might make it easier for him to try something new. Thanks for the idea!! :)

Looks yummy! Homemade pizza is my specialty, but have never done it as roll ups... that would be easier for taking a meal to friends, too. Will have to try that! I love the few occasions when Gil won't be home for dinner and I can go the simple route, too. I'll just have a salad or skip dinner, and the kids are happy with easy. Yum! What I great idea, I'm going to make this for my family. It looks like you sprinkled a little herb on top...which herb(s) did you use?

Jenny, I have a couple of variations for you that I do here at my house! I make a couple things similar to this that are very well received.

One is called a 'cheeseburger rollup'. Brown a pound of ground beef, drain, then back to the pan. I add Velveeta or cheddar cheese, some bbq sauce, and some bacon bits. Mix it all together and then slather the unrolled pizza dough with it! Roll up, as you did, but bake it whole. The result is a combo of pizza and one of our favorites--a hickory bacon cheeseburger!

The other variation is a big more involved, but not hard at all and definitely 'kid-help' friendly. It is my stromboli recipe, and every single time I make it I get requests for the recipe. I would be happy to share, if you would like it! Just email me at

Oh YUM! And I bet you could do a sweet version--butter and cinnamon sugar to make cinnamon rolls. I will have to try that!
