deceptively delicious!

Have you tried any recipes from this book?

If so, I would love to hear how they turned out and if you liked them or not.

I got this cook book a while back and I finally got around to making a recipe from the book.

I have been craving chocolate so I thought the Chocolate Chip Cookies would be a great one to try. My sister made them earlier in the week and said they were good.

I was pleasantly surprised with the results. They actually tasted REALLY good and no one in my house could tell what the healthy secret ingredient was... chic peas!!!!!!

Here's the recipe in case you want to give it a try.

Nonstick cooking spray
1 cup firmly packed light or dark brown sugar
3/4 cup trans-fat free soft tub margarine spread ( I just use regular butter)
2 large egg whites
2 teaspoons pure vanilla extract
1 (15 - ounce) can chickpeas, drained and rinsed.
2 Cups (12 ounces) semisweet chocolate chips
3/4 cup chopped walnuts (optional)
3/4 cups raisins (optional)
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt

Preheat oven to 350 degrees, F. Coat a baking sheet with cooking spray.

In a large mixing bowl or the bowl of an electric mixer, beat the sugar and margarine with a wooden spoon or on medium speed until smooth. Beat in the egg whites and vanilla, then the chickpeas and chocolate chips. Add the flour, oats, baking soda, and salt, walnuts and raisins (if wanted,) and mix on a low speed until a thing dough forms.

Drop the dough by the tablespoonful onto the baking sheet, spacing the cookies about 2 inches apart. Press gently with a fork to flatten. Bake until the cookies are golden brown and just set, 11 to 13 mintues; do not overbake. Transfer to a rack to cool.

ive made the french toast...but you add in bananas so even if you could taste it my kids would like it!

I'n kinda scared to add green stuff to desserts though....I think I mighy gross myself out!

We have that cookbook also. The macaroni and cheese is really good, it has become my family's favorite. Also, the chicken nuggets are good. Steve saw me using sweet potato puree in the breading and even he couldn't taste it when we were eating dinner. Good luck!

I have the book too, but need to try some of the recipes. I used the pureeing instructions a lot when Britton was on baby food. I want to try some out though, I'll let you know if I do!!

So glad you posted on this. I have this cookbook, but surely could use some motivation to do a recipe. Seems like a lot of work. Is it?

Thanks for posting! I have made a few things from it and the kids haven't even noticed! The thing I took away most from the cook book is it got to expand my horizon's as far as add more veggies to things and how to substitute apple sauce for oil and stuff like that!

A few weeks ago, a girlfriend and I got together to make and freeze several dishes. I didn't tell my non-veggie eating husband that the Spaghetti Pie was laced with veggies (he! he!), and he inhaled it! Everything has been good so far. The banana bread has a rather strange consistency...still tastes good, though.

Hey Jenny,

I love that book. I liked the chocolate chip cookies and the scrambled egss, but pretty much everything I've made we've liked. Oh yeah, the tuna melt sandwiches...very good.
