Pumpkin Chocolate Chip Bread!

Riley and I were in the mood to bake today, so we pulled out one of our favorite fall recipes...

Chocolate Chip Pumpkin Bread

It's delicious and it reminds me of fall.


Here's the recipe...Just in case your in the baking mood too...
FYI: It makes a ton.
I got 1 loaf, 4 mini loaves, and 12 muffins out of this recipe!
  • 3 cups white sugar
  • 1 (15 ounce) can pumpkin puree
  • 1 cup vegetable oil
  • 2/3 cup water
  • 4 eggs
  • 3 1/2 cups all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1 tablespoon ground nutmeg
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1 cup miniature semisweet chocolate chips
  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 9x5 inch loaf pans.
  2. In a large bowl, combine sugar, pumpkin, oil, water, and eggs. Beat until smooth. Blend in flour, cinnamon, nutmeg, baking soda, and salt. Fold in chocolate chips.
  3. Bake for 1 hour, or until an inserted knife comes out clean. Cool on wire racks before removing from cans or pans.

I may try to make this recipe this weekend. I have to get a few of the ingredients! Maybe I will have a coupon to triple for some of them! It is nice when it makes so much! Treats for everyone!

Gosh that looks good! I'm going to have to make some. I love anything pumpkin. You are wonder woman... cooking all that, with a newborn, a toddler and a bun in the oven. :)

Hi Jenny,
I found your blog while reading other blogs. This recipe sounds yummy! Can you give the measurements for the nuts? I dont see it listed in the ingredients. Also, what do you mean by 'coffee cans'? This may be a term I am not familiar with--you dont mean actual coffee cans? Or do you? :~)

Well I'm thankful for visiting from Leah's since I've found a recipe I've been wanting. Actually, my mother just asked me for a good pumpkin anything recipe last night. It seems she has a stack of canned pumpkin that she'd like to use.
